ABOUT THE FOUNDER

With a background in biochemistry and engineering, founder Heidi Kizer has spent more than twenty years immersed in science, with over a decade dedicated to baking science. What began as bread experiments for friends and family grew into a regional farmers market business before expanding into The Bakingtist Bakery and Café, an award-winning storefront specializing in long-fermented sourdough and brioche breads, viennoiserie, pastries, gourmet cookies, and klobásníky.

Driven by a passion for making food science approachable, Heidi founded The Bakingtist School of Baking, a science-focused baking school open to the public. Through hands-on classes and experimentation, students explored the science behind breads, pastries, and a wide variety of other baked goods.

That same passion inspired the creation of Baking with STEAM (Science, Technology, Engineering, Art, and Mathematics), a line of educational baking products sold nationwide. The collection included at-home baking science kits, educational graphics such as The Bakingtist's Periodic Table of Baking Elements, and science-inspired apparel and baking accessories.

Fermentation eventually became the inspiration for Heidi's next venture, Razzo Pizzeria. Built around naturally fermented dough, the sourdough-focused restaurant celebrated the craftsmanship, flavor, and complexity that fermentation brings to exceptional pizza.

Today, Heidi is focused on applying her experience to opportunities in bakery product development, food science, and innovation, while continuing to grow The Bakingtist as a platform for exploration, education, and creativity.

Above all, Heidi is driven by a genuine curiosity about the science of baking and finds her greatest fulfillment in product development and design, baking research, and baking science education.
